Chocolate Guinness Cupcakes with Whiskey Filling

When Sharon called to ask me to come hang with Wellman Farms at a horse show this past weekend, she mentioned that it was Sean's (the barn husband) birthday and we probably needed some cake. I took the hint, but went with cupcakes instead because they're easier to transport. I perused around for a fun recipe to try and when I came across beer cupcakes with whiskey filling and frosting I was in! Sean's my drinking buddy, so it was a perfect choice. I used a recipe from Smitten Kitchen (an excellent recipe source) and modified it a bit because I have an inability to NOT mess with a recipe. These are also called Irish Car Bomb cupcakes, but I skipped the Bailey's Frosting and made some up because I just didn't feel like going to the store again.

The first thing you need is some Guinness. Walk to the gas station across the street from your apartment, they will only have a liter bottle so you will look like a lush. Great fun amongst the interstate gas station patrons.

You'll only need a cup (sans fizz), so you can proceed to take a very awkward photo of yourself drinking the rest. Honestly- it's too strong/bitter for me. I couldn't finish it all.

Put beer and butter into a saucepan and bring it to a simmer. Add your cocoa and stir until it's dissolved (so far, this recipe is going well, right?)

While the beer mixture cools, blend the eggs and sour cream. Mix together remaining dry ingredients in another bowl. Add the beer mix to the egg mix and blend well. Slowly stir into the dry ingredients until completely blended. Bake. The cupcakes will need to be completely cool to hollow them out. I used the freezer for this- much faster.

While your cupcakes are cooking/cooling you make your filling. I ended up having to melt chocolate in the end, but these packets are amazing for that job. Because melting chocolate is kinda tricky at times (see below). Now, I followed her recipe and the filling was awful!

Not sure what I did wrong, but either buy the packets that are sweetened or melt chocolate chips like I did, OR sweeten with powdered sugar. Because adding granulated sugar to melted chocolate gets you this:

Disgusting.

OK, back on track... use pre-melted and sweetened chocolate or slowly melt some semi sweet or milk chocolate chocolate chips in a pan with heavy cream and more butter. Whisk it together until melted and blended and add remaining ingredients.

This is what happens when you let your one-year-old niece play with your whisk:

Let the filling cool and hollow out your cupcakes. She used a one-inch piping tip. Personally, I finally found a use for my melon baller and it worked like a charm. Fill cupcakes.

After that, all that's left if frosting! If you want to go for the Bailey's icing read the Smitten Kitchen Recipe. I did whiskey cream cheese and it rocked.

If your kitchen looks like an Irish Car Bomb exploded in it, you did it right! :)

FULL RECIPE:

Cupcakes:
1 cup Guinness (or any stout beer)
1 cup (2 sticks) butter
3/4 cup unsweetend cocoa powder
2 cups flour
2 cups sugar
1 12/ teaspoons baking powder
3/4 teaspoon salt
2 large eggs
2/3 cup sour cream

Bring the beer and butter to a simmer and stir in the cocoa until mixed. Cool slightly. Beat eggs and sour cream until well blended. Mix remaining dry ingredients. Add the beer mix to your egg mix, then slowly fold that into your dry ingredients until blended well. Bake at 350 for 15 - 20 minutes (depending on your oven) and cool completely.
Makes about 20 cupcakes.

Ganache Filling:
8oz semi sweet or milk chocolate
2/3 cup heavy cream
2 tablespoons of butter at room temp
2 tablespoons Irish Whiskey
Powdered Sugar to thicken.

The original recipe did not call for powdered sugar, but I found that my finished product was a bit thin and probably would have seeped into the cupcakes too much, so I thickened with powdered sugar.

Heat the cream until just simmering and add your chocolate. If it needs to melt, reduce your heat and stir regularly until the chocolate is melted and blended. Add the butter and whiskey and stir until combined. Remove from heat and add powdered sugar in small amounts until the mixture is thick enough to stay in the cupcakes.

Hole-out your cupcakes and fill with ganache.

Whiskey Frosting:
3 to 4 cups of powdered sugar
3 tablespoons cream cheese, softened
1/2 stick of butter, softened
3 to 4 tablespoons Irish Whiskey

Mix the cream cheese, butter and whiskey until blended. Add powdered sugar until you have a good spreading consistency. Ice cupcakes.

Kentucky Derby + Bucket List #1

Saturday was the Kentucky Derby!

Is there anything more beautiful than a horse in a full run and enjoying it? It gives me butterflies of excitement and makes me want to cry at the same time every year when I watch this race. I'm not a year-long follower of racing, I admit. I think I would like to be, but as of now I am not. I catch Derby fever every May, though, and it rolls into Triple Crown fever fairly quickly.

When I was a kid I read a series of horse books about Thoroughbred racing and I was addicted. I would ride Little Man around bareback at a canter/gallop to get the feeling of it. I was somewhat of a wuss and would have made a crappy jockey because I rarely hit a full on run. But a girl can dream.

I sit and watch all 2 hours of pre coverage and just swoon. The animals are so incredibly beautiful and in top form. They are athletes at their very best. When the race is underway I start at the edge of my seat and end up jumping around the living room by the backstretch. Total nerd.

I am dead to attend in person one day and smell the track smells while I watch! I adore the smell of horseflesh and horse sweat.

My very own half-Thoroughbred, Eternal Little Man via Eternal Son who ran in the Derby!

Bucket List #1
I tried the Frozen Mint Margaritas for the derby as I am not a huge fan of Mint Juleps. They were very good, but a few words to the wise:
- Use at least half the amount of sugar recommended. Too sweet!
- Add about another half cup of mint leaves and make sure you tear them before putting them in the pot.
- Make ahead! I had no idea they had to freeze for 2 hours. I thought I'd be firing up the blender. I barely made the race.

Summer Bucket List

I suppose it's still spring, isn't it? But, today excluded, it's been 90+ degrees here this week. So I'm feeling summerish.

I got the My Recipes newsletter today and stumbled across a long list of margarita recipes! Well... HELLO! Margaritas are my peeps. So I have created my Margarita Summer Bucket List. I'm going to keep a tally on the blog and check them off as we go. Wanna try it with me?

Classic Margarita
I'm going to go ahead and check this one off, because I think we all know I've tried it!
MyRecipe.com recipe here, or mine (which I think is perfect) here.

These are basically frozen raspberry margaritas. Not sure what the"Sangre" is about but it sounds fancy so let's go with it. Recipe here

Adirondack Margarita
Apple Juice? Well, OK, sure... Recipe here

This involves dumping tequila over Lime Sorbet. How hard is that? If you still want a recipe, see here.

Pomegranate Margarita
I'm all about jumping on bandwagons- so let's get onto the Pomegranate one! Recipe here.

Watermelon Margaritas
This is going to be great for summer! And apparently they are lower calorie than other margaritas. Like I care! Recipe here.

Key Lime Margarita
This makes me want to hear some Jimmy Buffet. Recipe here.

Watermelon Mint Margarita
I have fresh mint growing, so this should be yummy. Recipe here.

Strawberry Banana Margarita
This sounds like a smoothie and I feel like I can get Niki to try it!! Recipe here.

Frozen Mint Margarita
I'm not a huge fan of Mint Juleps (or Bourbon in general for that matter), so I'm thinking this for the Kentucky Derby! Recipe here.

Combier Margarita
Come to find out, "Combier" is the original Triple Sec. Recipe here.

Cucumber Chili Margarita
Cayenne Pepper in a Margarita? Must try!! Recipe here.

So there it is- my summer bucket list. Who's with me??

What life is about

A few pics of my New Years trip.
I almost didn't come home. When Niki dropped me off at the airport Nathan burst into tears and cried, "Auntie, please don't leave me!"
It was heartbreaking.

Teaching a 3 year old about fireworks!!

I love sparklers

Niki and I had much more fun with the sparklers than Nathan

No explanation needed

My Roommate & my Roommate-in-Law
(When they got engaged, he told me not to worry because he knew Niki and I were a package deal)

Niki double fisting- a one in a lifetime photo!!

This is Niki's friend Kim's baby boy and I think his face is so priceless

Lorelei's New Year bling. Don't you love it???

Wrapping up our evening. Jade and I were quite happy at this point!

At the park a few days later

Once again, I am having more fun than the kid

The sweetest face. How could I leave him??

Holiday Kick-off in Covington

Getting ready

Pointing out his favorite granddaughter! Hehehehe

This lady is adorable, but I really wanted to know what she had in her clear glass bottle with a cork... this is a Louisiana retirement home, folks. One never knows!

Festive red and green walkers... HA!!

The Christwood Singers

Paw Paw and his girls. How cute is he??

Amount of luggage needed for a one night stay in the retirement home

Day 2: lunch with Aunt Karen!

Lunch's main course ;)

Then TONS of shopping which I was too busy to take pictures during, a stop at one of Mama's best high school friend's houses and a GREAT mother-daughter dinner

Go cup they gave Mama for her wine after our dinner. Gotta love Louisiana!! The straw is really key for a $12 glass of wine ;)

Pixie refusing to be left behind

Pixie's preferred seat on the way home was looking out the window

My favorite conversation of the weekend:

Paw Paw: complaining about his money and having to pay for dinner when he, Uncle Tom and Aunt Karen went out a few nights before (my grandfather has nearly a million dollars in Exxon stock)
Me: Paw Paw, why are you worried about that? You have plenty of money to go out to eat sometimes.
Paw Paw: No, no. I consider that ya'lls money. I just have it for now, but I made it for all of you (awww, so sweet)
Me: Oh, well, I don't mind of you use it for dinner sometimes!

a little while later

Paw Paw: teasing/fussing about giving us all money for Christmas
Me: Paw Paw, I thought you said it was our money. You're just giving us what's ours!
Paw Paw: Yeah, but right now I like to count it every day.

Mama and I bought him an automatic-counting bank for Christmas to save him some time counting his money every day (which he probably does)

Hope your start to the last week before Christmas was a great as mine!

Playing with and keeping up with my nephew and niece take up a lot of my time. Van Geaux takes up the rest of it. Work is an afterthought most days! I like to be outside- but not when it's too hot. I get bored at my desk all day. Niki keeps my world spinning and without her and AC I'd lose it. My work ethic crashes at 4 p.m. daily and I live my sweet puppy and my hedgehog whenever I am not at Niki's. I truly believe naps are quality pass-time events, and sometimes I say bad words at work. I'm pretty sure I'm insane on multiple levels and I believe rules don't apply to me.
It seems that my life is quite entertaining. I didn't realize this myself, but was informed of it by my friends- who are rather entertained by tales of my life occurrences.

I'm far from a professional writer. These are just stories, comments, and other items for simple amusement. Hopefully it's a fun read, as Shannon plans to edit it into a book one day! Maybe we'll become famous, and maybe we'll just have some good laughs at my expense (and some other characters in my life). Either way, happy reading!
